S'mores Brownies w/ Toasted Homemade Marshmallows

S'mores Brownies. The third installment of my Homecook's Guide went live this week! How To: Homemade Marshmallows. The best & only way you will ever eat marshmallows. And I thought to myself, (aside from eating them in one sitting on their own), how can we use these marshmallows?! I just had been camping. I took the marshmallows with me, for research of course. And I just had S'MORES on the brain. A buttery, crumbly graham cracker crust, fudgey brownie layer, and a gooey toasted marshmallow top.

The Graham Cracker Crust

The graham cracker crust is quick and simple. Melted butter & graham crackers line your baking dish. Lay them in flat sheets and fill whatever empty edges you have with smaller pieces. The brownie batter is equally as simple. There is one tip I will give. Try to dump the sugar quickly into the hot melted chocolate mixture. This will give you the perfect crinkle top crust that you love in a brownie!

Fudgy Brownie Batter

Whisk your dry ingredients (flour & cocoa powder) together to get them out of the way. Next, your wet ingredients. Start with melting the chocolate and butter together. They will be hot! THEN we add the sugars, then eggs. And finally combine wet and dry ingredients. Brownie batter is just as simple as the box mix, which is why you should always make them from scratch. I added milk chocolate chips to the center so we can get as much s'mores flavor as possible.

Of course, you do not need to make the marshmallows. You can use any of your favorite marshmallows: jumbo, square, mini, you name it. But once you try the homemade marshmallows, I promise you will never go back. It's simple, easy, and fun, and they taste ten times better than a bagged marshmallow. Once you toast them, they form a toasted, crispy outside with a super gooey center. Have I convinced you to try yet?!

S'mores Brownies w/ Toasted Homemade Marshmallows

Ingredients
 

Graham Cracker Crust

  • 8-9 Honey Graham Crackers
  • 4 tablespoon butter , + more for greasing baking dish

Brownies

  • ¾ cup Semi-Sweet Chocolate Chips
  • ½ cup Milk Chocolate Chips
  • ¾ cup Unsalted Butter, (1 + ½ stick)
  • 1 cup White Sugar
  • ¼ cup Light Brown Sugar, packed
  • 3 Eggs, room temperature
  • 1 cup All Purpose Flour
  • ½ cup Cocoa Powder
  • ¼ teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 12-15 Marshmallows

Instructions
 

Graham Cracker Crust

  • First, if you are making my homemade marshmallows, make them with proper time to rest (3-4 hours). Preheat oven to 350°
  • Make Crust: Melt 4tbs butter. Grease baking dish with butter or non-stick spray. Lay graham crackers along the bottom of the baking dish, breaking up any pieces to fit that you need. Drizzle the butter as evenly over the crackers as you can or use a basting brush.

Brownies

  • Combine Dry Ingredients: In a large bowl, add flour & cocoa powder. Whisk until combined.
  • Combine Wet Ingredients: In a medium microwave safe bowl, add butter & semi sweet chips (keep milk choc aside for now). In 30 second intervals, microwave both together, stirring after each 30 seconds. It should take 3-4 times to be completely melted and combined. Quickly add the brown & white sugars and whisk while chocolate is still hot. Add eggs, then vanilla and whisk again until incorporated.
  • Add Dry to Wet: Add chocolatey wet mixture into the dry ingredients & whisk until completely combined. Finally, add ½ cup (not melted) milk chocolate chips. Fold into the batter. Pour brownie batter over the graham cracker crust and spread carefully and as evenly as possible
  • Bake: Bake in oven for 25-30 minutes, or until a toothpick comes out clean. Remove from oven. Brownies take a while to completely cool, but that is how you get those good, milk chocolate chunks inside. While the brownies cool, it is a good time to make your homemade marshmallows.
