Everything Bagel Breakfast Sandwich Casserole

Breakfast Sandwich Casserole. "Bacon, Egg & Cheese on an Everything Bagel" - this is my family's breakfast order ALL summer long. It just makes me think of summer and being with my family and tons of happy breakfast memories. The memory-inducing power of food is the reason I love it so much. I'm really happy about this recipe because it is a fun way to make a breakfast sandwich for everyone. Salty, cheesy, tons of everything bagel flavor. You will end up making this for every foreseeable family brunch like Easter & Mother's Day and any event where you choose to go bottomless mimosas.

Stale Bagels are Best

I think this works best when you start off with a stale bagel. I like the little crunch and chew of a bagel, and super soft bagels will stay soft in this recipe. So, start by leaving them out overnight. This step is optional, but I think super beneficial. I actually just buy them, put four on a plate and let it sit out until I'm ready to use them (you can go up to 2 days). The bagels get a little brown and toasty on the top and offer some crunchy texture to your cheesy casserole.

There is some weird hate out there on casseroles, and sometimes I understand it. But I want you to know that if I ever post a casserole, it has tons of flavor and texture and will be something you love to make.

After our stale bagels are cut up - the rest of the recipe process is wildly simple. Whisk everything in a bowl and dump it over the bagels. It kind of makes a bread pudding. The stale bagels soak up some of the egg mixture and all the cheese melts around it with crispy salty bacon. I add basil and parsley for some freshness and I love basil + everything bagel seasoning. One of the most exciting things about growing up for me is getting to do these things for my family. I love hosting them, making too much food and feeding everyone. I am sure I will be making this for Easter Brunch, but I have some other options - Prosciutto & Asparagus Puff Pastry Tart is DELICIOUS and so is this Crumb Topped Banana Bread if you like something sweet.

Breakfast Sandwich Casserole

Everything Bagel Breakfast Sandwich Casserole

A breakfast sandwich in a casserole. Think bacon, egg and cheese on an everything bagel but serves 10.

Ingredients
 

  • 4 Everything Bagels , stale is best if you let them sit out the night before!
  • 3 tablespoon unsalted butter
  • 12 oz bacon
  • 8 large eggs
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese, I like to use sharp cheddar
  • 1 cup gruyere, shredded or grated
  • ½ cup basil, chopped
  • ¼ cup parsley, chopped
  • ¼ teaspoon black pepper
  • 1 big pinch salt
  • t tablespoon minced chives, optional for garnish

Instructions
 

  • Preheat oven to 350°
  • Cook Bacon: In a large skillet, cook your bacon strips on low-medium until crispy and fat is rendered. Place on paper towels to lightly drain. While bacon is cooking, cut up bagels into pieces, shred cheese, chop herbs. Melt butter.
  • Assemble: Add bagel pieces to baking dish. Drizzle melted butter over top and toss with your hands try to get some butter on as many bagel pieces as you can. In a large bowl, add 8 eggs, 2 cups cream & whisk until eggs are combined. Add 1 cup cheddar, 1 cup gruyere, ½ cup basil, ¼ cup parsley and big pinch salt & pepper. Mix together with whisk or rubber spatula. Pour this mixture all over the bagels.
  • Prepare to Bake: Toss the egg mixture all over the bagels. Mix and toss so bagel pieces are mostly covered. Chop or break up hour bacona and sprinkle throughout. Toss again to coat and spread evenly in dish.
  • Bake: Bake for 30 minutes or until there is no wet eggs. Press lightly on a bagel piece to see, eggs should be fully cooked through. Sprinkle with minced chives! Serve with ketchup or hot sauce or on its on. You can reheat in the oven or microwave.

Home Cook's Notes

*You can use any bagel flavor you'd like here, but I prefer everything bagel because there is tons of flavor. 
* You could also do this recipe with sausage! I would cook 12oz breakfast sausage that crumbles. Drain and follow the same instructions as bacon.

    This recipe is amazing and such an easy way to do breakfast/brunch for a crowd! I made a half batch for a smaller group but still used the full amount of herbs. I also subbed the Gruyère for shredded mozz to make it a little cheaper and it was so delicious. Everyone raved about it and requested the recipe! Try this one!!!
