Sour Cream & Onion Roasted Potato Salad. This is the first time I am making a sour cream & onion combo, but I can guarantee it won’t be the last! The salty, crispy, roasted potatoes toasted with lots of salt and pepper–amazing on their own. BUT THEN we toss them in a delicious sour cream and onion sauce. Freshness enhances this dish completely. Lots of parsley and thinly sliced green onion are added on the end. These balance the starchiness of the potatoes, the salt & adds extra (but not too powerful) onion flavor.
There are few things that look as appetizing as a golden, crispy, beautiful potato. A home cook tip? Older potatoes yield crispier potatoes. So if you know you are going to make this, let them sit for a few days on the counter. The sugars keep converting to starch the longer they sit. These old potatoes are also perfect to make french fries or mashed potatoes.
I know I fairly recently put up a potato side dish (Parmesan Smashed Potatoes with pesto), but I could not get this idea out of my head! There are more side dishes coming (with other vegetables!), I promise.
