I have not posted a soup recipe on my blog before. And that is because I am a firm believer in “soup is not a meal.” But first of all, it’s soup season. Second of all, THIS Loaded Cauliflower Soup is a meal. It is so filling and so good, especially with all of the toppings. I am so excited about sharing this recipe with you during these chilly months.
I am ALSO a believer in “cauliflower is not potato.” So I am not here to spout any crazy lies that this tastes just like potato soup, but it does taste AMAZING. It’s so hearty, healthy and delicious. Subsequently, it’s insanely easy to make. Dump your cauliflower, broth, and other ingredients into the crockpot. A good amount of black pepper makes this soup super warm and delicious with a HINT of spice. Then you just let it sit. This is the soup ready for blending . I do have stove top directions as well!
Next, when everything is ready, we blend the soup. In two separate batches, blend the soup in the blender until creamy. And finally, the most important part, the LOADED part of the Loaded Cauliflower Soup. Crispy bacon, sour cream, cheddar cheese and finely chopped green onions. Nature’s Rancher bacon is my absolute favorite bacon ever. There are no added sugars, it’s all natural and it crisps up PERFECTLY. If you can find it in stores, I highly recommend. As for the other toppings: I love sour cream so much it is my favorite topping on foods and loaded soups like this.
