No Churn Buddy the Elf Ice cream. I love Christmas. I love ice cream, and I love making recipes easy for you to make yourself. This entire season is about making desserts and awesome appetizers for your friends or family or with your kids. I wanted to make something that was for me, but also festive and fun. Elf is an incredible Christmas staple. His spaghetti breakfast has some of my favorite junk foods & this just had to be done. It is so easy to make – I hope you love it.
No Churn Ice Cream
No Churn Ice Cream has been around forever. It is such an amazing trend – you could pass this off to anyone and they would have no idea you didn’t churn this in a fancy kitchen. I’m love the idea of packaging it in these white quart containers & giving them as gifts for Christmas.
No Churn Ice Cream is also super simple because it’s two ingredients. As long as you whip the cream to a soft peak, every other step is a breeze. Over-whipping can lead to a little bit of a weird texture at the end. You want to look for a soft peak: when you lift the whisk out of the cream, it should linger for a second or two, and then drip back into the bowl. Next, you add the condensed milk. You can whip a litltle harder here. This will add more air, while assuring we don’t over whip that cream.
The ice cream base itself is a simple vanilla: whipped cream, sweetened condensed milk & vanilla. It’s the mix-ins that make it so Buddy the Elf. The pictures below will show you the texture of the base as well as a final before going into the freezer.
Buddy The Elf Spaghetti Breakfast
In the photo above, Buddy is eating (on top of spaghetti): chocolate fudge pop tarts, chocolate syrup, marshmallows, maple syrup & m&ms. M&Ms are possibly my favorite candy & I LOVE them crushed up in ice cream. So crunchy and chocolatey. For marshmallows I went with fluff. Marshmallow fluff freezes SO well & is really a perfect texture to scoop in this ice cream. I also love marshmallows in ice cream. I used crushed m&ms (Christmas colored, but you can use any that you like) & my favorite, Hershey’s Chocolate Syrup. Why eat it on spaghetti when you can eat all of these toppings in ice cream?

No Churn Buddy the Elf Ice Cream
Equipment
- 1 stand mixer, hand mixer, or whisk
Ingredients
- 2 cups heavy whipping cream
- 14 oz sweetened condensed milk
- 1 tsp vanilla extract
- 2 tbs maple syrup optional
- 1/2 cup marshmallow creme I like Fluff
- 3 tbs Hershey chocolate syrup
- 2 chocolate frosted Pop-tarts 1 package
- 1/3 cup M&Ms I like to use red & green
Instructions
- Prep Toppings: Chop M&Ms carefully with knife on cutting board. Roughly chop, they will be varying sizes. Break up the pop tarts with your hands to get varying pop tart chunks as well (some crust & some of the middle etc)
- Make No Churn Base: In the bowl of your stand mixer, or with a large bowl and whisk or hand mixer, whip the heavy cream to soft peaks. The whipped cream should hang for a second or two onto the whisk, and then drip back into the bowl. Next, add sweetened condensed milk, maple if using, and vanilla. Whip on high for 15-20 seconds until everything is incorporated and a little bit stiffer. Set aside.
- Add Mix Ins & Freeze: Begin layering the ice cream. Layer in a freezer safe container with tight lid and I also like to have plastic wrap on top. Add 1/2 of the ice cream base to container and spread evenly. Dollop 1/2 the marshmallow creme onto the base. Using the tip of a knife or a chopstick/toothpick, swirl the marshmallow into the ice cream base. Next, drizzle 1/2 of the chocolate syrup. Crumble half of the crushed pop tarts over top as well as 1/2 of the M&Ms. Repeat with second half. Cover with saran wrap and very gently press on top of the ice cream before securing the lid.
- Freeze Ice Cream for 6-8 hours or overnight. Serve in a cone or dish with extra toppings!
