Fig & Prosciutto Pizza. “It is fig season.” I am sure you are seeing this caption on every food-blogger & food-instagram newsfeed you scroll by lately. Figs are trendy, picturesque, and some people don’t even think they taste that good! But figs are fat, purple, rain drops of sweet perfection. They pair well with so many delicious foods. And today I have paired figs with Honey-Thyme Goat Cheese, Fig & Prosciutto Pizza-a mouthful, literally. I love figs because they are kind of weird and funky. They can stand up to funky cheeses, like goat cheese. You can wrap them in salty bacon or ribbons of prosciutto. Eat figs as jam with crackers or sweet, drizzled with honey on oatmeal. Today, we are throwing them on pizza.
Making this pizza is so simple. I don’t yet have my own pizza dough recipe, so I said to grab your favorite. You can use a premed crust, or your favorite dough. I prefer to grill it or cook it in my cast iron. The residual heat from baking the crust makes the honey-thyme goat cheese mixture super creamy and melt, and the toppings do not need much bake time. So cook your favorite crust all the way through, add your toppings to the hot crust, and throw it back on the grill or stove for 2-3 more minutes. It really is that simple.
We totally let the combination of flavors talk in this recipe. There definitely isn’t anything to challenging in itself. It is all about balance. I don’t add too much salt to the goat cheese & thyme base, because the prosciutto is so salty. The figs are so sweet in themselves, and the balsamic glaze drizzled over top adds a super tangy deliciousness that balances everything out. This Fig & Prosciutto Pizza is sweet, salty, & tangy with a crispy crust.
