Flavor Packed Bruschetta. Bruschetta is very simple & to pack it with flavor requires no unexpected ingredients, just a shift in preparation. As tomato season hits, it is the perfect time to make a bruschetta. It is one of my boyfriend, Steve’s, favorite foods so each tip and trick is so simple even he can make it! Which is really saying a lot. Ripe tomatoes, fresh garden herbs, and a good olive oil are really all you need.
Extra Virgin Olive Oil
First I am going to start with the olive oil. I have been using the classic popular name brand olive oils forever, and I still do. But I read an article explaining the quality of these oils (it’s here if you are interested) and that changed how I use olive oil forever! I still by the cheap stuff, let’s be real. But my rule is: buy a really good extra virgin olive oil and use it when the the flavor of the olive oil is part of the dish.

Oh and if you ever wanted to have a bowl of olive oil on the table with some garlic to dip your bread in? This is the stuff to use.
Salt to Taste
As you could tell I often say to salt in layers or salt to taste instead of putting an exact measurement. Home cooks are almost told to only cook with salt & pepper and throw it in at the end. Forget all of that forever. Salting to taste will ensure you’re bringing out the flavor of each ingredient, balancing your dish, and have a final dish that is tailored to exactly how you want it. Continue to toss and taste until you see the difference. When you can taste every little piece of the bruschetta in one bite: acidic, sweet, salty, fresh, you know you have done it.
