Easy Chicken Tinga Tostadas. I love salty tortilla chips, and I love chicken Tinga. Lately, I have been ordering from a local Mexican place with some of the best food & I really wanted to create something as versatile as chicken tinga, and as good as your favorite Mexican. This chicken Tinga is slightly spicy, smoky and really packed with flavor. It is very reminiscent of an easy Italian pasta sauce, but with a few changes that aren’t too different than your usual favorite ingredients.
Chicken Tinga
Very reminiscent of a classic Italian sauce (like my Hearty Bolognese), this Chicken Tinga starts with a very similar base. Soften & brown onion in olive oil, add garlic, tomato paste and pureed tomatoes. The differences are seasonings & chipotles in a adobo.
The chipotles add spicy, smoky, classic Tinga flavor. The spices are also classics you probably already have in your pantry: garlic powder, oregano, garlic & onion powder. Smoked paprika just adds another layer of FLAVORED smoky-ness. Don’t worry, I steered far away from that super BBQ, stand over a smoker, taste. This is subtle, yet spicy and really delicious.
The Tostadas – Crispy Corn Tortillas
In my notes you will see many different options to get a crispy corn tortilla. My absolute favorite? A tablespoon of olive oil in a small skillet. Flip the tortilla every 15 seconds until totally golden. Drip off the excess oil & kosher salt. I really want you to make this recipe, but my favorite snack right now is a quick-fried tortilla, mashed avocado, lemon & everything bagel seasoning.
