Easter Strawberry Vanilla Dirt Cups. Do dirt cups ever get old? A creamy, airy pudding filling covered in crushed oreos. I almost never turn it down. This one is a little different – instead of cream cheese I used a strawberry vanilla greek yogurt to keep it light, but still a little tangy. We added a ton more vanilla flavor with fresh strawberries to cut through some of the sweetness. You can make these for just about everything, but I wanted a recipe that is fun for kids that still is pretty to look at and delicious. “Carrot top” garnish is just a strawberry dipped in orange colored white chocolate – it’s optional but can you even think of anything cuter!?
The “Dirt” Filling
I kept the filling for this recipe just as simple as your favorite original recipe with equally as simple changes. We are still going to make the classic instant vanilla pudding using 2 cups of cold milk. A quick whisk in a bowl and you’re done! I could have made my own pudding, but you know let’s keep it EASY. Next, add our 15oz of greek of greek yogurt to the mixture. I love the Nounos Strawberry Vanilla because the vanilla is amazing and it has so much strawberry flavor. Yogurt is also less heavy than cream cheese and I think makes the entire dessert feel a little lighter.
We are going to whip one cup of heavy cream. This is going to add some light, fluffiness to the pudding and also balance out some of the overly-sweet. At this point, I’m not sure how many times I’ve said “light and fluffy” but you get the gist.
Oreo Dirt & Carrot Tops
Finally, we assemble. Layer thin sliced strawberries, crushed oreos, the light and airy filling, and more oreos on top. Top with a strawberry carrot top garnish. I used a few of the Nounos yogurt jars for mini dirt cups. But you can use mason jars, a huge trifle dish, a bunch of plastic cups. Whatever your heart desires for your Easter celebration.
These are super cute and simple to make. You can buy orange candy melts, or melt white chocolate and use red and yellow food coloring to get the perfect color. Dip your strawberry into the chocolate. Freeze on parchment for 5-10 minutes. Next, a light drizzle of the same color for the “ridges”. Freeze again. Nestle them into the oreo dirt and serve.
