How to Cook Steak 101. This is called an Easy Steak Recipe because it is not complicated. There is no fancy pan sauce or difficult, trendy cooking method. It is a classic steak recipe with the best tips to make it taste great: cooking it on high heat to form a golden brown crust and render some fat, while staying juicy, flavorful *& medium rare*. Lets start.
Ingredients You Will Need
- Big 4-finger pinch Kosher Salt
- 1 Ribeye Steak 3/4 lb
- Avocado Oil
- Your favorite pan or cast iron
You will see my first instruction below says remove steak from the fridge and salt it. This is important! I like to let my steak sit out, salted, for 45 minutes to an hour. But any time you can offer will benefit you. The steak comes to room temp so that it cooks evenly throughout. A cold steak in a hot pan cooks the outside faster than the inside.
Liberally pre-salt the steak. This step is because the salt will work its way through the steak, seasoning it all the way through and taking out some of the moisture for ultimate browning. The salt also breaks down any tough fibers and gives you a super tender steak. The picture above is of the steak AFTER salting. There is no more visible salt crystals, and it is ready for cooking!
My next instruction calls for heating the pan. I also suggest to wait until the oil is just-smoking. This is for the gorgeous brown crust you see in the photos. It gives the steak caramelization and a little bit of crispy. If you put the steak into a cool pan, it will look pale and pale in comparison when it comes to flavor. (WORD PLAY for my other English majors out there!). Finally, let your steak rest! Cutting through the steak too soon let’s out all of the delicious juices.
Finally (again), if you are afraid about over or undercooking your steak, get a Meat Thermometer! This is the one I used when I first started out cooking. Start to get understand how the steak FEELS when it’s ready. Next time you go for an Easy Steak Dinner, you will have it down perfectly. I really hope you give this one a try.
